Pilipino humba recipes and ingredients

Humba is a Filipino dish similar to adobo, typically made with pork belly cooked in a sweet and savory sauce. Here's a basic recipe and ingredients:

• 2 lbs pork belly, cut into cubes

• 1/2 cup soy sauce

• 1/2 cup vinegar (preferably cane or rice vinegar)

• 1 cup water

• 1/4 cup brown sugar (adjust to taste)

• 4-5 cloves garlic, minced

• 1 onion, chopped

• 2-3 pieces dried bay leaves

• 1 teaspoon whole peppercorns

• 2-3 tablespoons cooking oil

• Hard-boiled eggs (optional)

Instructions:

• Heat oil in a pan and sauté garlic and onions until fragrant.

• Add the pork belly and cook until browned.

• Pour soy sauce, vinegar, water, bay leaves, peppercorns, and sugar into the pot. Bring to a boil.

• Lower the heat, cover the pot, and simmer until the pork is tender (about 45 minutes to 1 hour). Stir occasionally.

• Adjust the seasoning to taste. If you want a thicker sauce, you can reduce it further.

• Add hard-boiled eggs to the pot if desired and let it simmer for a few more minutes.

Serve hot with steamed rice. Adjust the sweetness or saltiness according to your preference by adding more sugar or soy sauce.
