Famous Pilipino Recipe Chicken Adobo





Ingredients:

• Two pounds of bone-in or boneless chicken drumsticks or thighs with skin on or off

• Half a cup sesame oil

• 1/2 cup vinegar (either apple cider vinegar or white vinegar)

• One water cup

• Four minced garlic cloves

• One sliced onion

• Three bay leaf

• A tsp full black pepper, ground

• One-tsp frying oil

• Optional: 1 tsp sugar (if wanted to balance the tastes)

• Chopped cilantro or green onions as an optional garnish

Procedures

• Marinate the Chicken: Put the chicken pieces, soy sauce, garlic, and black pepper in a dish or resealable bag. In the refrigerator, let it marinade for at least 30 to 60 minutes. If you want extra taste, you may marinade it longer.

• How to Cook Adobo:

• In a big pan or saucepan, warm up some oil over medium heat.

• After adding the marinated chicken pieces, sauté them for about five minutes, reserving the marinade.

When the onions are transparent, add the sliced onions and simmer.

• Add the remaining marinade, water, sugar (if used), and bay leaves.

• After bringing the mixture to a boil, turn down the heat. Once the chicken is well cooked and soft, cover the saucepan and simmer for 30 to 40 minutes.

• Last Details:

• After the chicken is done, cover the saucepan and boil the sauce for a further five to ten minutes to enable it to gradually thicken.

• If necessary, taste and adjust the seasoning. To suit your taste, you can add a little extra vinegar or soy sauce.

• Before serving, take out the bay leaves.

• Serve: Traditionally, chicken adobo is served with steamed rice. Garnish with chopped green onions or cilantro if desired.
